La Sorgente – A slice of authentic Maremma, nestled in the heart of nature
La Sorgente is a cozy outdoor restaurant nestled in an oak forest, where you can enjoy traditional dishes from the Maremma region. It’s a simple, authentic spot, perfect for dining in the shade, breathing in the fresh air, and relaxing away from the hustle and bustle of the coast.
Its history is both ancient and fascinating. It all began in 1783, when Father Giovanni Battista, the brother of Saint Paul of the Cross (founder of the Passionist Fathers), discovered a spring during a severe drought. That clear, fresh water enabled the religious community and the local people to survive and carry on.
Over the years, this place has become a resting spot for pilgrims on their way to the Mother House of the Passionist Order, as well as for many local people, who came here during difficult times in search of peace and solace.
Today, right next to that spring, which still flows crystal-clear, stands La Sorgente, a restaurant that combines history, nature, and Tuscan cuisine. After thorough testing, the spring water is still safe to drink, as fresh and pure as ever.
But the story of La Sorgente doesn’t end there. In fact, this place was reborn about 30 years before it took on its current form, thanks to the idea of a resident of Orbetello. He wanted to create a simple place where people could escape the summer chaos of the beach and enjoy a plate of pappardelle in the shade of the trees. So, residents of nearby towns (and beyond) began to visit it for snacks and to breathe in the cool air of the woods.
In the 1980s, my father—a butcher in Porto Santo Stefano—began supplying meat to La Sorgente, and in 1984 he became its manager. Since then, our family has always taken great care in selecting our products, especially the meat. During our travels through the Maremma in search of the best cuts, we discovered the value of rustic cuisine: simple dishes, made with wholesome ingredients, born out of necessity yet rich in flavor.
It has been nearly 40 years since our family took over La Sorgente. First my parents, and then I, have strived to carry on this tradition with passion. We have sought to preserve the authentic flavors of the Maremma of yesteryear, while incorporating modern culinary techniques. Our goal has always been the same: to honor the traditional recipes of our peasant grandmothers, without altering them.
Today, I can proudly say that the connection between the past and the present is still very much alive. And anyone who comes to visit us can experience it in every dish, in every sip of water, and in the peace that fills the air beneath these trees.
